    • String beans (sitaw) - Also called long beans, are longer and thinner beans compared to green beans. You can usually find them at Asian Stores. Prepare, wash, and cut them into 2 inches in length.
    • Protein - Today, I'm using pork loin slices. You can substitute this with any ground meat, seafood, or, fried tofu if you are vegetarian or vegan.
    • Aromatics - Minced garlic and chopped onion add tons of aroma and flavors to the dish.
    • Soy sauce - The main seasoning for adobo is soy sauce. It serves as a flavor enhancer. It is a staple in Filipino cuisine.
    • Vinegar - Gives tangy flavors.

    Instructions

    Step 1. In a skillet over medium heat, preheat cooking oil. Sauté the garlic and onion until fragrant and translucent. Then add the sliced pork loin and cook until light to a golden brown, stirring occasionally.

    Step 2. Then add the sitaw, soy sauce, and, brown sugar. Toss to combine and cook for 5 minutes or until the beans are cooked but not soft. You may want to add water if you want a more saucy adobo.

    Step 3. Lastly, add the vinegar, leave it undisturbed for the vinegar to cook for a minute, then stir to combine all the flavors. Do a taste test and adjust accordingly with salt and pepper.

    Helpful Tips

    • For spicy sitaw adobo, you can add chopped red chili or serrano pepper. Start by adding just 2 large pieces and more if needed.
    • This dish usually serves as a main or side dish with cooked white rice.

    Storage: Allow the dish to cool completely and transfer it into a glass container with a lid and store it in the refrigerator for up to 5 days. Leftovers will taste better the next day.
