    Ingredients

    • elbow macaroni
    • Italian pork sausage
    • medium yellow onion
    • cloves garlic
    • Italian seasoning
    • bone broth
    • marinara sauce
    • sharp cheddar cheese

    Instructions

    1. In a saucepan, cook the elbow macaroni in boiling water with a pinch of salt until al dente. Drain and rinse with cold water to stop the cooking process and avoid sticking together. Do not overcook them.
    2. In a skillet over medium heat with cooking oil, cook garlic, onion, and sausage together. Break the sausage into tiny pieces with a wooden spatula, and stir occasionally as it cooks. Continue to cook until the sausage turns light to a golden brown, about 8-10 minutes.
    3. Pour the broth, marinara sauce, cooked elbow macaroni, and Italian seasonings. Stir everything until well blended and let it simmer for 5-10 minutes.
    4. Taste test and adjust the seasonings with salt and pepper accordingly. Sprinkle sharp cheddar cheese on the top, cover, and continue to cook on the stovetop until the cheese is melted about 5 minutes.

    Helpful Tips

    • Cook the elbow macaroni until al dente. Do not overcook them because we are going to finish cooking them together with the tomato sauce.
    • If you wanted to finish this goulash in the oven, don't forget to preheat it first to 350F and bake this until the cheese is melted, about 10 minutes or longer.
    • Make sausage goulash vegan or vegetarian by substituting plant-based sausage and cheese.
    • To store the leftovers, allow the goulash sausage to cool completely and transfer it into a glass container for up to 5 days.
