    Oftentimes, I cook more than enough rice and I always think of something to do with leftovers. Today I have mushrooms and some vegetables that are waiting for me in the refrigerator to so I should cook a tasty and delicious complete meal for my family out of what I have.

    • Quick and easy to make! The rice is all ready to cook and all you have to do is stir fry it along with mushrooms and vegetables. It is ready in 15 minutes and you do not need too much hard work in the kitchen.
    • All the ingredients are probably in your kitchen. This is a clean your refrigerator meal if you ask me. You can use your day-old rice, mushrooms, and vegetables that need to be used before they go to waste.
    • Budget-friendly and low-calorie. This is perfect if you wanted a meal that will not break your bank while keeping you full and satisfied for hours. It is also a low-calorie dish thanks to all the vegetables and mushrooms. If you are counting your calories, this fried rice idea is good for you.
    • A colorful, flavorful, and healthy meal that will satisfy everybody. You can have a dish and side dish in one recipe in this mushroom vegetable fried rice for your whole family.
    • Meatless meal - If you do not consume animal protein because you are vegan, vegetarian or with other religious belief, this fried rice recipe is for you. In exchange of meat, we will use mushrooms which is so good for you.

    Main Ingredients

    With minimal ingredients from your refrigerator and freezer, you can make some yummy mushroom vegetable fried rice that everyone will enjoy and love. This fried rice is perfect for vegetarian or vegan but if you can add extra meat if you think you want extra protein.

    • Leftover rice - Either it is 1 or a few more days leftover rice is completely fine. You can use white or brown rice.
    • Cooking oil - Avocado oil, olive oil or coconut oil is my favorite.
    • Mushrooms - It adds earthy and savory flavor and texture. Any type of mushroom is a great option.
    • Vegetables - Fresh or frozen vegetables. Use what is available in your fridge at the moment. I use a mix of frozen vegetables.
    • Soy sauce - For flavor and color.
    • Salt and black pepper - To taste
    • Cilantro/parsley/green onion - For garnish.

    You can whip this mushroom vegetable fried rice in less than 15 minutes with just a few easy steps. Impressive right?

    • First, we need to grab all the ingredients. If your rice is chunky, break them apart into tiny pieces using a fork or your hands.
    • Grab a wok or skillet and heat cooking oil on medium heat. Cook garlic until you can smell the aroma or when you see it turn to light brown.
    • Add in mushroom and cook until soft for about 5 minutes on medium to high heat.
    • Stir in rice, vegetables, soy sauce, salt, and ground black pepper. Continue stirring for about 5 minutes. Turn off the heat.
    • Garnish with some cilantro, parsley, or green onions for extra color and presentation. Serve and Enjoy!

    Storage and reheating Tips

    • Refrigerator - Cool down completely your leftover fried rice and store it in an air-tight container. Refrigerate for 3-5 days.
    • Freezer - The mushroom vegetable fried rice is freezer-friendly. It will last a long time in your freezer. Transfer in a freezer-friendly container and store in the freezer for 3 months. Thaw in the refrigerator overnight or on your countertop until it reaches room temperature.
    • Reheating - Reheat your leftover fried rice on the stovetop using a skillet. Sprinkle some water if you think it dried out. Heat until warm thoroughly. You can also use the microwave. Microwave for 1 minute in a glass or microwave-safe container.

    1 Wok/ Skillet

    Ingredients
      

    • 2 tablespoons cooking oil
    • 3 cloves garlic, minced
    • 4 cups day-old rice, leftover
    • 8 ounce mushroom
    • 2 tablespoons soy sauce
    • 1-2 cups fresh or froozen mix vegetables
    • ⅛ teaspoons salt
    • ⅛ teaspoons ground black pepper
    • 1 bunch cilantro or green onions for garnish, chopped

    Instructions
     

    • Heat a wok in medium to high heat and add cooking oil. Cook garlic until aromatic.
    • Add mushrooms and stir fry for 5 minutes or until it soften. Add rice, vegetables, soy sauce, salt and ground black pepper. Stir and mix well until everything is well combined. Stir-fry for 5 minutes. Turn off heat.
    • Garnish with cilantro or parsley. Serve and enjoy!

    Notes:
    You can add more vegetables such as broccoli, cabbage, and cauliflower for example.
    You can also add extra protein of your choice such as chicken, beef, or pork.
